KAJIAN KEARIFAN LOKAL UBI KAYU DALAM USAHA KERUPUK SANJAI DI KOTA BUKITTINGGI

Abstract

The purpose of this research are : 1) identifying and knowing the application of local wisdom about plants ranging from cassava planting up to the processing to be sanjai crackers in Bukittinggi city, 2) Strategize the development done in maintaining local wisdom sanjai crackers in Bukittinggi. The number of samples taken for as much as 17 respondents from the city of Bukittinggi. Sampling techniques using Snowball Sampling. The data analysis done in a descriptive and SWOT analysis. The results showed that there were 48 local wisdom to plant cassava, which consists of 8 wisdom that there used to be but not preserved, 35 wisdom that there used to be and is still maintained, as well as 5 new wisdom and is still maintained, while 30 local wisdom Sanjai crackers, which consists of 12 wisdom that there used to be but not preserved, 9 wisdom that there used to be and is still maintained and 9 new wisdom and is still maintained. Development strategies are done in maintaining local wisdom there are 3 :1) maintains the use of traditional tools and the ways earlier in the cultivation of sweet kayuuntuk retain local wisdom and cassava plants save on production costs, 2) Establish communication with the Government to preserve and keep develops business Sanjai Crackers, 3) maintain and improve the quality and quantity of Sanjai Crackers.
